Canadian Chef Guilia Lombardo on making a world of difference

Part of making a world of difference is to dare unusual pairings and to go out of our comfort zone to find the perfect match between food and wine. Dennis Pang, digital marketing veteran, recently met up with Giulia Lombardo, Chef at Lombardo's to do just that.
Lombardo's is a popular Italian pizzeria and restaurant, serving Vancouver since 1986. They are the city's original wood burning oven pizzeria and Giulia cooks there with her mother and two sisters.
Giulia Lombardo loves food, and it's easy to see why as she was born into a restaurant family.
She trained as a chef in Vancouver and recently came back from London where she had an opportunity to work with celebrity chef, Wolfgang Puck, at his oh-so-chic CUT on Park Lane. She has a burning passion for travel and experiencing local cuisines. All her experiences have cemented her fascination for food and her commitment to never stop exploring its place in our hearts. Giulia was particularly charmed by the family traditions that lie at Portugal’s heart, and the authenticity of their terroir wines.
In fact, she is an avid wine lover and has great fun with pairing different types of wine with her Italian cuisine. « I recently discovered a Portuguese red grape called Touriga Nacional, to my great pleasure it pairs wonderfully with some of our dishes. I tried it the other night with penne pasta over fennel sausage ragu, It was fantastic! The dark fruit flavours with hints of herb and leather reminded me fondly of a good French Cab Sauvignon. »
